Cardamom Butter Bars

I’ve just recently discovered Cardamom and friends, it’s a game changer. It brings a dish to a whole new level of complexity, and it’s perfect for adding just a bit of a kick or spice to something sweet.

I recently decided to add Cardamom Sugar last minute to these toffee butter bars I was making one weekend. Best decision ever. My recipe has forever changed, and today I am gifting you with said recipe so that your home may also be blessed with this goodness. I love how simple these bars are to make, and require very little ingredients, which is quite shocking for the amazing impact they have on your taste buds! I love making these for last minute guests or parties, when I don’t have a lot in the pantry. Nowadays, I make them and binge-eat the pan in front of our favorite shows. Such is life right about now. Anyway, please enjoy this recipe and let me know how it turns out!

right before going into the oven … checkout that cardamom!

 CARDAMOM BUTTER BARS

1 cup butter (I use salted)

1 cup sugar

1 egg

1 tsp. vanilla extract

2 cups all-purpose flour

2 Tbsp. cardamom sugar (just equal parts ground cardamom and sugar)

11-14 oz. semi-sweet or dark chocolate bar, broken into pieces (I buy the big one at Trader Joe’s)

½ cup walnuts or pecans, chopped

1.     Preheat oven to 350 degrees. Grease your 9x13 pan with butter or spray.
2.     In an electric mixer, cream butter & sugar until fluffy. Beat in the egg and vanilla. Slowly add your flour, mixing well.
3.     Spread your mixture into your prepared pan. Sprinkle the cardamom sugar evenly over the batter.
4.     Bake for 20 min. (note: it may not appear done, but it is!)
5.     Immediately after you take out from the oven, place the chocolate squares all over the baked bar. Once chocolate is melted, spread evenly with spatula. Sprinkle nuts evenly on top.
6.     Cut into bars and enjoy!
